Jake,
A few ideas:
-For your computer labs, look into K12LTSP (www.k12ltsp.org), an version of
the Linux Terminal Server Project focused on education and schools. With
it, you can provide computers for one-tenth the cost of doing so with
Windows; or to put it another way, you can provide ten times as many
computers for the same cost of one Windows computer. It has lower
maintenance costs than Windows, too.
-Contact Daniel Howard (who I am copying on this) of the Georgia Open Source
Education Foundation (www.gosef.org) for info about how they were able to
change student access time with computers from 30 minutes per week to a
couple of hours per day using Linux. The program was so successful that the
Atlanta Public School system has been expanding the program every year since.
