$ git archive --format=tar --prefix=gear-1.7.2.6-alt1/ tags/1.7.2.6-alt1 | gzip -9n > gear-1.7.2.6-alt1.tar.gz

Если не забыть передать -n gzip'у, то файл для указанного тэга будет получаться всякий раз одинаковым.
