А вот это для cifs не подойдёт?

file_mode=arg
   If  the  server  does  not support the CIFS Unix extensions this
   overrides the default file mode.

dir_mode=arg
   If the server does not support the  CIFS  Unix  extensions  this
   overrides the default mode for directories.
