Можно руками, подредактировав файл ~/GNUstep/Defaults/WMSound
А вообще, надо взять утилитку WSoundPrefs.
(http://voins.program.ru/WSoundPrefs-1.1.2.tar.gz)
Дособрать её в сизиф всё руки не доходят.

Запустить WSoundServer.

Вообще-то этот проект уже очень давно не развивается.
